- 3–4 boneless skinless chicken breasts
- 1 cup plain full-fat yogurt
- 2 tablespoons garam masala
- 1 cup canned tomato sauce
- 1 cup coconut milk or cream
- Fresh ginger and garlic
Instructions
- 1. Marinate chicken: In a bowl, combine yogurt, garam masala, minced garlic, grated ginger, salt, and lemon juice. Add cubed chicken and refrigerate for at least one hour.
- 2. Sear chicken: Heat oil in a skillet over medium-high heat. Sear marinated chicken until golden brown on all sides (about 5 minutes). Set aside.
- 3. Prepare the sauce: In the same skillet, sauté chopped onions until translucent. Stir in additional garlic and ginger before adding tomato sauce.
- 4. Add creaminess: Lower heat and mix in coconut milk/cream after simmering the tomato mixture for about five minutes.
- 5. Combine: Return seared chicken to the skillet and simmer on low heat for another ten minutes until cooked through.
