  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sear seasoned chicken breasts for about 5 minutes per side until browned.
  2. Add diced onions, carrots, celery, and minced garlic. Sauté for 3–4 minutes until fragrant.
  3. Pour in chicken broth and stir in wild rice blend. Bring to a boil before reducing heat to simmer.
  4. After 30 minutes, add heavy cream or coconut milk along with thyme and bay leaf. Stir gently.
  5. Adjust seasoning with salt and pepper. Remove bay leaf before serving.
