  • 1 (15 oz) can fire-roasted diced tomatoes
  • 4 cups low-sodium beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and diced onions. Sauté until soft (about 5 minutes), then stir in minced garlic until fragrant.
  2. Increase heat slightly, add ground beef, and cook until browned (about 7 minutes). Drain excess fat if necessary.
  3. Add canned tomatoes and broth; stir to combine and let flavors meld.
  4. Bring to boil, then reduce heat to low. Add broken lasagna noodles and Italian seasoning; simmer uncovered for about 15 minutes or until pasta is al dente.
  5. Stir in ricotta cheese until creamy; top each serving with shredded mozzarella cheese until melted.
