  • 2 cups fresh bell peppers (mixed colors, sliced)
  • 1 large yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 2 tbsp taco seasoning
  • Juice of 1 lime
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Heat a large pot over medium heat and add olive oil. Sauté onions and garlic until fragrant and golden brown (3-5 minutes).
