Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup wild rice
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 34 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1/2 cup heavy cream (optional)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Chop the onions, carrots, celery, and rinse the wild rice until the water runs clear.
  2. In a large pot over medium heat, sauté onions in butter or olive oil until soft (about 5 minutes). Add garlic and cook until fragrant.
  3. Add chicken breasts and broth; bring to a gentle boil.
  4. Stir in carrots, celery, thyme, bay leaf, and rinsed wild rice. Reduce heat to low and simmer for 30-40 minutes until rice is tender.

  6. Serve warm with fresh bread or croutons.
