  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prep your veggies by washing and dicing them into small pieces for faster cooking.
  2. In a large pot over medium heat, drizzle olive oil and sauté onions and garlic until translucent (about 5 minutes).
  3. Add rinsed lentils along with cumin and paprika; stir to coat.
  4. Pour in vegetable broth along with diced carrots and celery. Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are tender.
  5. Stir in spinach or kale during the last five minutes of cooking. Finish by squeezing fresh lemon juice over the top before serving.
