Ingredients

  • 4 medium Yukon Gold potatoes
  • 3 cups fresh broccoli florets
  • 1 large onion
  • 3 garlic cloves
  • 4 cups vegetable broth
  • 1 cup milk or cream (optional)
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Peel and dice the Yukon Gold potatoes into small cubes.
  2. Finely chop the onion and mince the garlic.
  3. Heat olive oil in a large pot over medium heat; sauté the onion until translucent.
  4. Add diced potatoes and vegetable broth; bring to a boil, then simmer until potatoes are tender (about 15 minutes).
  5. Stir in broccoli florets and cook for an additional 5 minutes.
  6. Blend half or all of the soup using an immersion blender for a creamy consistency.
  7. Return to low heat, add milk or cream if desired, season with salt and pepper, then serve warm.
