This creamy, hearty dish features tender chicken, pillowy gnocchi, and vibrant vegetables simmered in a rich broth. Perfect for chilly evenings, it’s a delightful meal that brings family together around the table.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 package (16 oz) gnocchi
  • 2 medium carrots, diced
  • 2 stalks celery, finely chopped
  • 2 cups fresh spinach or kale
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper; cook until golden brown and fully cooked through. Remove and let it rest.
  2. In the same pot, add garlic, onions, carrots, and celery; sauté until fragrant and onions are translucent.
  3. Pour in chicken broth and bring to a boil for about five minutes.
  4. Stir in gnocchi and greens; cook until gnocchi floats (about 2-3 minutes).
  5. Reduce heat to low; add heavy cream and seasonings. Simmer for another minute until warmed through.
