  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds until fragrant. Add chopped spinach and cook until wilted.
  3. In a bowl, combine softened cream cheese, drained artichokes, sautéed spinach, mozzarella, and half of the Parmesan cheese; mix until creamy.
  4. Place seasoned chicken in a baking dish and generously spoon the creamy mixture over each breast.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  6. Sprinkle remaining Parmesan on top and let rest for five minutes before serving.
