  • 2 cups fresh ripe tomatoes, chopped
  • 1 cup fresh basil leaves, packed
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic; sauté until soft and fragrant (about 5 minutes).
  2. Stir in the chopped tomatoes, cooking until they break down and release their juices (approximately 10 minutes).
  3. Pour in vegetable broth; bring to a gentle boil. Reduce heat and simmer for about 15 minutes to meld flavors.
  4. Remove from heat; blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in chopped basil and let it infuse for a couple of minutes before seasoning with salt and pepper to taste.
