Instructions
- Preheat the oven to 400°F (200°C).
- Grease a muffin tin with nonstick spray or olive oil.
- Thinly slice the potatoes (about 1/8 inch thick) using a mandoline or sharp knife.
- Toss potato slices in a bowl with olive oil, garlic powder, salt, pepper, and optional herbs until evenly coated.
- Layer 5–7 potato slices in each muffin cup, stacking for height.
- Bake for 30–35 minutes until golden brown and crispy.
- Let cool slightly before removing from the muffin tin.
