  • 2 tablespoons extra virgin olive oil

  • ½ teaspoon smoked paprika

Instructions

  1. Peel and grate the sweet potatoes using a box grater or food processor.
  2. Soak the grated sweet potatoes in cold water for 10 minutes, then drain and pat dry.
  3. Heat olive oil in a large nonstick skillet over medium heat. Sauté the onions until translucent.
  4. Add the drained sweet potato shreds to the skillet and spread evenly. Cook undisturbed for about 5 minutes until golden brown on one side.
  5. Flip half of the mixture and cook for an additional 5 minutes until crispy and golden brown.
  6. Season with salt, pepper, and smoked paprika before serving hot.
