Ingredients

  • 1 can kidney beans, rinsed
  • 1 can chickpeas, rinsed
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Cumin (optional)

Instructions

  1. Rinse all canned beans under cold water until clear to reduce sodium.
  2. Dice the bell peppers and finely chop the red onion.
  3. Combine the chopped veggies and cilantro in a large bowl.
  4. In a separate bowl, whisk together lime juice and olive oil.
  5. Gently fold the beans into the vegetable mixture along with the lime dressing. Season with salt, pepper, and cumin if desired.
