Instructions
- Preheat the oven to 400°F (200°C). Wash beets, trim ends, wrap in foil, and roast until tender (about 45-60 minutes).
- Allow beets to cool slightly, then peel off skins. Slice or cube the beets.
- Arrange sliced beets over mixed greens on a platter.
