Ingredients

  • 4 medium beets
  • 4 oz goat cheese
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 cup walnuts (toasted)
  • 3 tbsp balsamic vinegar
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash beets, trim ends, wrap in foil, and roast until tender (about 45-60 minutes).
  2. Allow beets to cool slightly, then peel off skins. Slice or cube the beets.
  3. Arrange sliced beets over mixed greens on a platter.
  4. Crumble goat cheese over the beets.
  5. Sprinkle toasted walnuts on top.
  6. Drizzle with balsamic vinegar and olive oil; season with salt and pepper.
