- 1 cup rolled oats
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1 cup milk
- 2 large eggs
- 1 cup fresh blueberries
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together rolled oats, flour, baking powder, salt, brown sugar, and cinnamon until combined.
- In another bowl, mix milk and eggs well. Pour into the dry ingredients and gently fold until just combined.
- Carefully fold in fresh blueberries without crushing them.
- Scoop batter into muffin cups, filling them three-quarters full. Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool for 5 minutes in the tin before transferring to a wire rack.
