Ingredients
- Large flour tortillas
- Eggs
- Shredded cheese (cheddar or Monterey Jack)
- Bell peppers (red or yellow)
- Onion (yellow or green)
- Salsa
- Avocado (optional)
- Salt & pepper
Instructions
- Chop the bell peppers and onion into small pieces.
- In a skillet over medium heat, add oil and sauté the chopped onions and peppers until softened (3-4 minutes).
- Whisk 4-6 eggs in a bowl, season with salt and pepper, then pour into the skillet with veggies once softened.
- When eggs are slightly runny (2-3 minutes), sprinkle shredded cheese on top and stir gently until melted.
- Lay a tortilla flat, spoon the egg mixture into the center, fold in both sides, and roll tightly from bottom to top.
- Place each wrapped burrito seam-side down in the skillet for 1-2 minutes until golden brown.
