Description

Start your day right with this scrumptious breakfast burrito, packed with eggs, cheese, and fresh veggies for a deliciously satisfying meal.


Ingredients

  • Large flour tortillas
  • Eggs
  • Shredded cheese (cheddar or Monterey Jack)
  • Bell peppers (red or yellow)
  • Onion (yellow or green)
  • Salsa
  • Avocado (optional)
  • Salt & pepper

Instructions

  1. Chop the bell peppers and onion into small pieces.
  2. In a skillet over medium heat, add oil and sauté the chopped onions and peppers until softened (3-4 minutes).
  3. Whisk 4-6 eggs in a bowl, season with salt and pepper, then pour into the skillet with veggies once softened.
  4. When eggs are slightly runny (2-3 minutes), sprinkle shredded cheese on top and stir gently until melted.
  5. Lay a tortilla flat, spoon the egg mixture into the center, fold in both sides, and roll tightly from bottom to top.
  6. Place each wrapped burrito seam-side down in the skillet for 1-2 minutes until golden brown.
