Description

Cowboy Casserole is a hearty and comforting dish that combines savory ground beef, colorful vegetables, and gooey cheese into a delicious one-pot meal perfect for family dinners or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup diced bell peppers (mixed colors)
  • 1 can (15 oz) sweet corn, drained
  • 8 oz egg noodles, cooked
  • 2 cups shredded cheddar cheese
  • Chili powder and garlic powder to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef with the chopped onion until soft.
  3. Add diced bell peppers and cook until slightly softened.
  4. Stir in the sweet corn and cooked egg noodles until well combined.
  5. Season with chili powder and garlic powder; mix in half of the shredded cheese until melted.
  6. Transfer the mixture to a greased baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes or until bubbly and golden.
