- 4 skinless salmon fillets
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 4 oz cream cheese, softened
- 1/2 cup shredded Parmesan cheese
- Juice of 1 lemon
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté minced garlic until golden, then add spinach and cook until wilted, about 3-4 minutes.
- In a bowl, mix softened cream cheese, sautéed spinach and garlic, shredded Parmesan, and lemon juice until well combined.
- Place salmon fillets skin-side down on a lined baking sheet. Cut slits into each fillet to create pockets for stuffing.
- Generously fill each pocket with the creamy spinach mixture.
- Bake for 20-25 minutes or until salmon is cooked through and flakes easily with a fork.
