Ingredients

  • 4 skinless salmon fillets
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1/2 cup shredded Parmesan cheese
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté minced garlic until golden, then add spinach and cook until wilted, about 3-4 minutes.
  3. In a bowl, mix softened cream cheese, sautéed spinach and garlic, shredded Parmesan, and lemon juice until well combined.
  4. Place salmon fillets skin-side down on a lined baking sheet. Cut slits into each fillet to create pockets for stuffing.
  5. Generously fill each pocket with the creamy spinach mixture.
  6. Bake for 20-25 minutes or until salmon is cooked through and flakes easily with a fork.
