Ingredients

  • 4 Halal chicken sausages
  • 1 cup mixed bell peppers (diced)
  • 1 medium onion (diced)
  • 4 large eggs
  • 4 flour or whole wheat tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt & pepper to taste

Instructions

  1. Sauté the vegetables: Heat olive oil in a skillet over medium heat, add diced onions and bell peppers, and cook until softened.
  2. Add chicken sausages: Slice halal chicken sausages into bite-sized pieces and add them to the skillet; cook until browned.
  3. Scramble the eggs: Whisk eggs with salt and pepper in a separate bowl, then pour into another heated pan. Stir gently until set.
  4. Assemble the wraps: Lay out tortillas, fill each with sausage mixture, scrambled eggs, and shredded cheese.
  5. Wrap it up: Fold the sides of each tortilla and roll tightly from one end to the other. Secure with a toothpick if desired.
