  • 1 cup All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 cup Unsalted Butter
  • 1/2 cup Fresh Lemons (for juice and zest)
  • 3 large Eggs
  • 1 teaspoon Baking Powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine 1 cup of flour, 1/2 cup of granulated sugar, and 1/2 cup of softened unsalted butter until crumbly.
  3. Press two-thirds of the mixture into the bottom of the prepared pan and bake for 15 minutes until golden.
  4. In another bowl, whisk together 1/2 cup of fresh lemon juice, 1 cup of sugar, 3 large eggs, 2 tablespoons of flour, 1 teaspoon of baking powder, and lemon zest.
  5. Pour the lemon filling over the baked crust and sprinkle the remaining crumble on top.
  6. Bake for an additional 20-25 minutes until set and lightly browned. Let cool completely before slicing.
