Ingredients

  • 1 cup green or brown lentils
  • 1 yellow onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 2 tbsp freshly squeezed lemon juice
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened.
  2. Add minced garlic and ground cumin; cook for about 1 minute until fragrant.
  3. Stir in rinsed lentils and vegetable broth. Bring to a gentle boil while stirring occasionally.
  4. Reduce heat to low and simmer uncovered for 25-30 minutes until lentils are tender, stirring occasionally.
  5. Once cooked, stir in lemon juice and adjust salt and pepper as needed.
  6. Serve hot with fresh herbs or crusty bread.
