- 1 yellow onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 2 tbsp freshly squeezed lemon juice
- 4 cups low-sodium vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened.
- Add minced garlic and ground cumin; cook for about 1 minute until fragrant.
- Stir in rinsed lentils and vegetable broth. Bring to a gentle boil while stirring occasionally.
- Reduce heat to low and simmer uncovered for 25-30 minutes until lentils are tender, stirring occasionally.
- Once cooked, stir in lemon juice and adjust salt and pepper as needed.
- Serve hot with fresh herbs or crusty bread.
