Ingredients
- 3–4 pounds chuck roast
- 1 packet ranch dressing mix
- 1 packet au jus gravy mix

- 1 cup low-sodium beef broth
Instructions
- Sear the chuck roast in a skillet over medium-high heat until browned on both sides (about 4-5 minutes per side).
- Place the roast in a slow cooker and sprinkle ranch dressing and au jus mixes evenly over it.
- Add sliced peppers around the roast and pour in beef broth until halfway up the meat.
