  • Salt and pepper to taste

Instructions

  1. Wash and slice the okra into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add oil and sauté the onions until translucent (about 5 minutes). Add garlic and cook for an additional minute.
  3. Stir in tomatoes, cumin, and paprika; simmer for about 5 minutes until tomatoes soften.
  4. Pour in vegetable broth and add okra. Bring to a gentle boil over medium-high heat; cook for 15-20 minutes until okra is tender.
  5. Season with salt and pepper to taste; finish with a squeeze of lemon juice before serving.
