  • 16 oz store-bought gnocchi
  • 2 cups spinach or kale

Instructions

  1. Prep your ingredients: Chop chicken, dice onion, mince garlic, and slice carrots and celery.
  2. In a large pot over medium heat, sauté olive oil with onions, carrots, celery, and garlic until softened (about 5 minutes).
  3. Add chopped chicken and season with salt and pepper; cook until no longer pink (6-8 minutes).
  4. Pour in chicken broth along with thyme and parsley; simmer for 15 minutes.
