Instructions
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes, placing them in a bowl. Drizzle with olive oil.
- Season with salt, pepper, and smoked paprika; toss until evenly coated.
- In a saucepan, melt unsalted butter and add minced garlic, cooking until fragrant.
- Pour the garlic butter over the seasoned potatoes and toss again.
- Spread the potatoes on a parchment-lined baking sheet; sprinkle generously with Parmesan cheese.
- Bake for 25-30 minutes or until golden brown and crisp, stirring halfway through for even cooking.
