Description

Ingredients

  • 1 lb baby potatoes
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves minced garlic
  • 4 tbsp unsalted butter
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes, placing them in a bowl. Drizzle with olive oil.
  3. Season with salt, pepper, and smoked paprika; toss until evenly coated.
  4. In a saucepan, melt unsalted butter and add minced garlic, cooking until fragrant.
  5. Pour the garlic butter over the seasoned potatoes and toss again.
  6. Spread the potatoes on a parchment-lined baking sheet; sprinkle generously with Parmesan cheese.
  7. Bake for 25-30 minutes or until golden brown and crisp, stirring halfway through for even cooking.
  8. Allow to cool slightly before serving.
