- 1 cup quinoa
- 1 zucchini
- 1 bell pepper (any color)
- 1 cup cherry tomatoes
- 1 red onion
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (parsley or basil)
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water and bring to a boil.
- Chop zucchini, bell pepper, cherry tomatoes, and red onion into bite-sized pieces. Toss with olive oil, salt, and pepper on a baking sheet.
- Roast veggies for 20-25 minutes until tender.
- Once quinoa absorbs all water (about 15 minutes), fluff with a fork.
- In a large bowl, mix roasted veggies with fluffed quinoa and drizzle fresh lemon juice over the top.
