  • 1 cup fresh basil leaves, chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange halved tomatoes on a parchment-lined baking sheet and drizzle with olive oil.
  2. Roast tomatoes for 25-30 minutes until caramelized.
  3. In a large pot, heat more olive oil over medium heat. Sauté diced onions and minced garlic until translucent (about 5 minutes).
  4. Add roasted tomatoes and vegetable broth to the pot. Bring to a gentle simmer for about 15 minutes.
  5. Stir in chopped basil and simmer for another 5 minutes.
  6. Blend the soup until smooth using an immersion blender or regular blender. Adjust seasoning as needed.
