- 1 lb lean ground beef
- 2 cups cooked rice
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds; set aside.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent (3-5 minutes).
- Add ground beef, cumin, and paprika to the skillet. Cook until browned; drain excess fat.
- Stir in cooked rice and canned tomatoes. Simmer for about 5 minutes.
- Fill each pepper generously with the meat mixture.
- Place stuffed peppers upright in a baking dish, cover with foil, and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until melted.
