  • 4 bell peppers (red, yellow, or green)
  • 1 lb lean ground beef
  • 2 cups cooked rice
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds; set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent (3-5 minutes).
  3. Add ground beef, cumin, and paprika to the skillet. Cook until browned; drain excess fat.
  4. Stir in cooked rice and canned tomatoes. Simmer for about 5 minutes.
  5. Fill each pepper generously with the meat mixture.
  6. Place stuffed peppers upright in a baking dish, cover with foil, and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until melted.
