- 4 bell peppers (any color)
- 2 cups cooked rice
- 1 lb ground meat (optional)
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- Oregano and basil to taste
- Salt and pepper to taste
- Shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
- Combine cooked rice, diced tomatoes, optional ground meat, herbs, salt, and pepper in the skillet; mix well.
- Generously stuff each pepper with the filling until it overflows slightly.
- Cover with foil and bake for 30 minutes. Remove foil, add cheese if desired, and bake for an additional 10–15 minutes until golden.
