Description

Delight in vibrant stuffed peppers filled with savory rice, perfect for any weeknight dinner.


Ingredients

  • 4 bell peppers (any color)
  • 2 cups cooked rice
  • 1 lb ground meat (optional)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Oregano and basil to taste
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. Combine cooked rice, diced tomatoes, optional ground meat, herbs, salt, and pepper in the skillet; mix well.
  4. Generously stuff each pepper with the filling until it overflows slightly.
  5. Cover with foil and bake for 30 minutes. Remove foil, add cheese if desired, and bake for an additional 10–15 minutes until golden.
