  • 8 oz (227g) pasta (penne or fusilli)
  • 2 cups (300g) cherry tomatoes, halved
  • 8 oz (226g) crumbled feta cheese
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano or 1 tbsp fresh basil
  • Salt and pepper to taste
  • ¼ cup (25g) grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine halved cherry tomatoes, minced garlic, olive oil, salt, and pepper. Toss to coat.
  3. Stir in the cooked pasta while it’s still warm to absorb flavors.
  4. Layer half of the pasta mixture in a baking dish and sprinkle with half of the crumbled feta. Repeat with the remaining pasta and feta.
  5. Bake for 25-30 minutes until bubbling and golden brown on top.
