Ingredients

Scale
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup quinoa, cooked
  • 1 cup bell peppers, diced (red or yellow)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tbsp olive oil (for sautéing)
  • Salt and pepper to taste
  • 4 whole wheat buns
  • Optional toppings: avocado, lettuce, tomato

  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell peppers until softened (about 5-7 minutes).
  3. Mash black beans in a mixing bowl until mostly smooth but still chunky.
  4. Mix in sautéed vegetables, cooked quinoa, minced garlic, cumin, paprika, salt, and pepper until well combined.
  5. Shape the mixture into patties about ½ inch thick; chill briefly if too soft.
  6. In the same skillet, heat olive oil over medium heat and cook each patty for 4-5 minutes per side until golden brown.
