Ingredients

  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 1 teaspoon pure vanilla extract
  • 8 ounces bittersweet chocolate
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Salt

Instructions

  1. In a saucepan, heat milk and heavy cream until steaming but not boiling.
  2. In a bowl, whisk together egg yolks and granulated sugar until light and fluffy.
  3. Gradually mix the warm milk into the egg mixture while whisking continuously.
  4. Combine cornstarch with cold water; stir into the custard along with vanilla extract.
  5. Cook over medium heat, stirring constantly, until thickened (about 5-7 minutes). Cool completely.
  6. For the ganache, pour hot heavy cream over chopped bittersweet chocolate; let sit for 2-3 minutes before stirring until smooth.
  7. Layer cooled custard in serving glasses and top with chocolate ganache.
  8. Chill for at least two hours before serving.
