Description

Luscious Lemon Raspberry Swirl Cheesecake is a creamy, vibrant dessert that blends zesty lemon with sweet raspberry swirls, perfect for impressing guests at any gathering.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • Zest and juice of 2 fresh lemons
  • 1 cup raspberries (fresh or thawed)
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Gradually add sugar, sour cream, eggs, lemon zest, and juice; mix until fluffy.
  3. Gently fold in half of the raspberries. Pour filling over the crust and top with remaining raspberries.
  4. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar to prevent cracking.
  5. Chill overnight in the refrigerator before serving.
