- 3 large eggs, room temperature
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Beat softened cream cheese until smooth. Gradually add sugar, sour cream, eggs, lemon zest, and juice; mix until fluffy.
- Gently fold in half of the raspberries. Pour filling over the crust and top with remaining raspberries.
- Bake for 50-60 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar to prevent cracking.
- Chill overnight in the refrigerator before serving.
