- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth or water

- Juice of half a lemon (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
- Add chopped carrots and celery; cook for about 5 minutes until softened.
- Stir in lentils and diced tomatoes with their juice.
- Pour in broth or water and add spices. Bring to a boil.
- Reduce heat to low and simmer for 30–35 minutes until lentils are tender.
- Taste and adjust seasoning; add lemon juice before serving.
