Ingredients

  • 1 cup green or brown lentils
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth or water

  • Juice of half a lemon (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  2. Add chopped carrots and celery; cook for about 5 minutes until softened.
  3. Stir in lentils and diced tomatoes with their juice.
  4. Pour in broth or water and add spices. Bring to a boil.
  5. Reduce heat to low and simmer for 30–35 minutes until lentils are tender.
  6. Taste and adjust seasoning; add lemon juice before serving.
