- 2–3 large bell peppers (red, yellow, or green)
- 2–3 boneless skinless chicken breasts
- 1 cup buffalo sauce
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 2 chopped green onions
- Ranch dressing (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
- Cook chicken in a skillet over medium heat until no longer pink, about 7-10 minutes per side. Let cool and shred.
- In a bowl, mix shredded chicken with cream cheese, buffalo sauce, half of the cheddar, and green onions until well combined.
- Stuff each pepper with the buffalo chicken mixture and top with remaining cheddar cheese.
- Bake for 25-30 minutes until the peppers are tender and cheese is golden.
