Description

Buffalo Chicken Stuffed Peppers are a spicy, creamy delight, perfect for game day or a cozy dinner. These colorful peppers are packed with flavor and sure to impress!


Ingredients

  • 23 large bell peppers (red, yellow, or green)
  • 23 boneless skinless chicken breasts
  • 1 cup buffalo sauce
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 chopped green onions
  • Ranch dressing (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in the baking dish.
  3. Cook chicken in a skillet over medium heat until no longer pink, about 7-10 minutes per side. Let cool and shred.
  4. In a bowl, mix shredded chicken with cream cheese, buffalo sauce, half of the cheddar, and green onions until well combined.
  5. Stuff each pepper with the buffalo chicken mixture and top with remaining cheddar cheese.
  6. Bake for 25-30 minutes until the peppers are tender and cheese is golden.
