- 3–4 boneless, skinless chicken breasts
- 1 cup fresh mozzarella cheese, shredded
- 1 cup marinara sauce
- 1 cup Italian breadcrumbs
- ½ cup grated Parmesan cheese
- Fresh basil, chopped
- Olive oil, for drizzling
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between plastic wrap and pound to about 1/2 inch thick.
- In a bowl, combine mozzarella, basil, and half of the marinara sauce.
- Spoon the mixture onto one side of each chicken breast and fold over.
- Dip in olive oil, then coat with breadcrumbs mixed with Parmesan.
- Arrange in a baking dish and pour remaining marinara sauce over them. Sprinkle extra cheese if desired.
- Bake for 25-30 minutes until golden brown and cooked through (internal temperature should reach 165°F).
