  • 2 cups fresh bell peppers, sliced (mixed colors)
  • 1 cup red onion, thinly sliced
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • ½ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions
