Instructions
- Cut boneless chicken into bite-sized pieces; season lightly with salt and pepper.
- Heat vegetable oil in a pan over medium-high heat; sauté chicken until golden brown (7-10 minutes).
- Add minced garlic and grated ginger; cook until fragrant (1 minute).
- Toss in bell peppers and pineapple; cook until peppers are tender but crisp (about 5 minutes).
- In a bowl, mix ketchup, soy sauce, brown sugar, rice vinegar, cornstarch, and water until smooth. Pour into the pan.
