Instructions

- Cut chicken breasts into bite-sized pieces.
- In one bowl, whisk eggs with salt and pepper. In another bowl, combine panko breadcrumbs with garlic powder.
- Dip each chicken piece in the egg wash, then coat it in breadcrumbs.
- Arrange nuggets on a parchment-lined baking sheet and lightly spray with olive oil.
- Bake for 20 minutes, flipping halfway through until golden brown and crispy.
