  • Fresh cilantro, for garnish
  • Juice of 1 lemon

Instructions

  2. Cook the aromatics: In a large skillet over medium heat, sauté the chopped onions in oil until translucent (about 5 minutes).
  3. Add garlic and ginger: Stir-fry until aromatic (about 1 minute).
  4. Brown the chicken: Add chicken thighs to the skillet and cook until golden on all sides (5-7 minutes).
  5. Create your sauce: Stir in curry powder and tomato paste; then add coconut milk and mix well.
