  • 1 cup jasmine rice
  • 2 fresh lemons (juice and zest)
  • 3 garlic cloves (minced)
  • 2 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, soy sauce, salt, and pepper. Marinate chicken breasts in this mixture for at least 15 minutes.
  3. Heat a large skillet over medium heat and add marinated chicken. Cook for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove the chicken and set aside. In the same skillet, sauté more olive oil if needed; then add minced garlic until fragrant.
  5. Stir in rinsed rice and chicken broth; bring to a boil, then reduce heat to low and cover tightly. Simmer for about 15 minutes or until liquid is absorbed.
  6. Fluff the rice with a fork before serving alongside sliced chicken.
