Instructions
- In a medium bowl, mix mascarpone with confectioners' sugar and vanilla extract until smooth.
- Brew strong coffee or espresso and let it cool.
- Quickly dip ladyfingers into the cooled coffee and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the raspberries on top. Repeat layers.
- Dust the top with cocoa powder and refrigerate for at least four hours, preferably overnight.
