- 2 cups low-sodium vegetable broth
- 1 tsp cumin seeds
- Fresh parsley for garnish
Instructions
- Rinse the rice under cold water until clear; set aside.
- In a medium saucepan over medium heat, heat olive oil and sauté the onion until translucent. Add garlic and cumin seeds; cook until fragrant.
- Stir in the rinsed rice and toast for 3-5 minutes until golden.
- Pour in vegetable broth, bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes, or until liquid is absorbed.
- Remove from heat, let sit covered for 5 minutes, then fluff with a fork and garnish with parsley.
