Ingredients

  • 2 cups cooked rice (white or brown)
  • 4 cups whole milk (or almond/oat milk)
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 1/2 cup raisins (optional)

Instructions

  1. In a medium saucepan over medium heat, combine the cooked rice, milk, sugar, salt, cinnamon, and vanilla extract. Stir gently until mixed well.
  2. Increase the heat slightly until the mixture starts bubbling softly around the edges. Stir occasionally to prevent sticking.
  3. Once simmering, reduce heat to low and allow it to cook for about 15-20 minutes until thickened.
  4. If using raisins, stir them in during the last 5 minutes of cooking.
  5. Remove from heat and let cool for a few minutes before serving warm or chilled.
