  • 6 ripe tomatoes, chopped
  • 1 head of garlic
  • 3 tablespoons olive oil

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice the top off the head of garlic, drizzle with olive oil, and wrap it in foil.
  3. Place the wrapped garlic in the oven and roast for about 30 minutes until soft and golden.
  4. Meanwhile, cook the spaghetti according to package instructions in a large pot of salted boiling water.
  5. In a skillet, heat olive oil over medium heat. Add the chopped tomatoes and sauté for about 5 minutes until they start to break down.
  6. Squeeze the roasted garlic cloves into the skillet, mix well, and season with salt and pepper.
  7. Once the spaghetti is cooked al dente, drain it and toss it in the skillet with the sauce.
