- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped

- Spices: paprika, cumin, salt, and pepper
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, sauté chopped onion and minced garlic until translucent.
- Add ground beef and cook until browned; drain excess fat. Season with salt and pepper.
- Mix in cooked rice, diced tomatoes, and spices; let simmer for 5 minutes.
- Generously stuff each bell pepper with the beef mixture.
- Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle cheese on top, then bake uncovered for an additional 10-15 minutes until golden.
