  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Spices: paprika, cumin, salt, and pepper

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic until translucent.
  3. Add ground beef and cook until browned; drain excess fat. Season with salt and pepper.
  4. Mix in cooked rice, diced tomatoes, and spices; let simmer for 5 minutes.
  5. Generously stuff each bell pepper with the beef mixture.
  6. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes.
