Middle Eastern Quinoa Tabbouleh is a vibrant and nutritious twist on the classic tabbouleh salad, perfect for any occasion. This refreshing dish combines protein-rich quinoa with an array of fresh herbs, crunchy vegetables, and zesty lemon dressing that tantalizes the taste buds in every bite.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 2 ripe tomatoes, diced
  • 1/2 cucumber, diced
  • 3 tablespoons lemon juice (freshly squeezed)
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15 minutes. Let cool.
  2. Finely chop parsley and mint; dice tomatoes and cucumber.
  3. Whisk together lemon juice, olive oil, salt, and pepper in a bowl.
  4. In a large bowl, mix cooled quinoa with herbs and vegetables. Pour dressing over and toss gently until combined.
  5. Serve chilled or at room temperature.
