- 1 cup cooked quinoa
- 1 cup fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 2 ripe tomatoes, diced
- 1/2 cucumber, diced
- 3 tablespoons lemon juice (freshly squeezed)
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15 minutes. Let cool.
- Finely chop parsley and mint; dice tomatoes and cucumber.
- Whisk together lemon juice, olive oil, salt, and pepper in a bowl.
- In a large bowl, mix cooled quinoa with herbs and vegetables. Pour dressing over and toss gently until combined.
