Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 cup whole wheat breadcrumbs
- 1 cup chopped bell peppers
- 1/2 cup diced onions
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a pot, combine 1 cup quinoa with 2 cups water, bring to a boil, then simmer for about 15 minutes until water is absorbed. Let cool.
- Mash black beans in a large bowl until mostly smooth.
- Add chopped bell peppers and onions to the mashed beans; mix well.
- Stir in cooked quinoa, breadcrumbs, cumin, paprika, salt, and pepper until combined.
- Form mixture into patties about half an inch thick.
- Heat oil in a skillet over medium heat; cook each patty for about 4 minutes per side until golden brown.
