Instructions

  1. In a large bowl, mash the ripe bananas until smooth, leaving some lumps for texture.
  2. Add rolled oats, eggs, milk, baking powder, cinnamon, and salt. Mix until just combined.
  3. Preheat a non-stick skillet over medium heat and lightly grease it. Once hot, pour about 1/4 cup of batter for each pancake. Cook until bubbles form on top (3-4 minutes), then flip and cook until golden brown.
