Description

Ingredients

  • 1 cup fresh spinach
  • 3 large eggs
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the spinach thoroughly.
  2. In a nonstick skillet over medium heat, heat olive oil or butter. Sauté spinach until wilted, about 2 minutes.
  3. Whisk eggs in a bowl with salt and pepper until combined.
  4. Gently fold crumbled feta into the egg mixture.
  5. Pour the egg mixture over the sautéed spinach and cook for about 3 minutes until bubbles form around the edges.
  6. Carefully fold the omelette in half and cook for an additional minute until set but soft inside.
  7. Serve immediately, garnished with extra feta or herbs if desired.
