Instructions
- Rinse and dry the spinach thoroughly.
- In a nonstick skillet over medium heat, heat olive oil or butter. Sauté spinach until wilted, about 2 minutes.
- Whisk eggs in a bowl with salt and pepper until combined.
- Gently fold crumbled feta into the egg mixture.
- Pour the egg mixture over the sautéed spinach and cook for about 3 minutes until bubbles form around the edges.
- Carefully fold the omelette in half and cook for an additional minute until set but soft inside.
